About
Summer squash have thin, edible skins, and soft seeds. The tender flesh has a high water content, a mild flavor, and does not require long cooking. The most widely available varieties of summer squash are Zucchini, Yellow Straightneck, Yellow Crookneck, and Pattypan. All summer squash are similar in taste and texture.

Varieties
Zucchini
Shaped like a slightly curved cylinder. Depending on variety the skin is medium to deep green.

Yellow Crookneck
This squash tapers from a bulbous blossom end to a curved, narrow stem end. Its pale yellow skin has a slightly pebbled texture and the flesh is pale yellow.

Yellow Straightneck
Almost a twin of Crookneck, this squash forms a tapering cylinder without a curved neck. Its skin may be pebbled like Crookneck's, or smooth, with a paler flesh.

Pattypan
A round, somewhat flattened summer squash with a scalloped edge. Some varieties are yellow-skinned, some green. The flesh is white.

Availability
Year-round.
